Nov. 24: Impact of Carbs & Veggies on a Spinal Cord Injury body

Carbs. They sure are a mystery. Low carbs. No carbs. What’s one with a spinal cord injury to do about their carb management? Well, on Tues., Nov. 24th @ 5:30 p.m. PST, noted Registered Dietitian Nutritionist, Shelley Wood, takes a deep dive to help unravel the relationship between carbohydrates and vegetables in her second presentation on the topic of carbs as she will discuss how much we need, how much is too much, how much is too little while also addressing fiber in depth as well as organics and phytonutrients. Shelley’s presentation will also cover the majority of major vitamins, touching upon certain ones that those with SCI might need to consider. It is part of “NorCal SCI Presents: Virtual is the New Reality Series” funded through a grant by the Reeve Foundation and you must register in advance to attend. Shelley is a lifelong advocate of nutrition and has worked since 2013 with the SCI population at Santa Clara Valley Medical Center in San Jose, one of the top SCI rehab hospitals in the country. In addition to her B.S. in Nutritional Science from San Jose State University, she obtained her Master’s in Public Health in 2016 from the University of New England.
