Carbs, Grains & Fibers: how an SCI body deals with them coming Oct. 28

The impact of carbs to the body of a person with a spinal cord injury is always misunderstood. In gyms, you used to hear about “loading up on carbs”. Equally misunderstood is the types of grains you come across, some healthier than others and it will all begin to make sense if you were to attend the Wed., Oct. 28th virtual presentation at 6:30 p.m. PT, led by Registered Dietitian Nutritionist, Shelley Wood. Among the topics she plans on addressing is the myths of a high carb diet, the physiology of carbs, the different grains and how to eat the most appropriate ones and also a complete rundown on fiber with an emphasis on the impact on bowel management. This free virtual presentation is part of “NorCal SCI Presents: Virtual is the New Reality Series” funded through a grant by the Reeve Foundation and you must register in advance to attend. Shelley is a lifelong advocate of nutrition and has worked since 2013 with the SCI population at Santa Clara Valley Medical Center in San Jose, one of the top SCI rehab hospitals in the country. In addition to her B.S. in Nutritional Science from San Jose State University, she obtained her Master’s in Public Health in 2016 from the University of New England.
