Dietitian, Shelley Wood, tackles the "role of fat in a healthy diet following spinal cord injury" on Jan. 26

Fat. Many people pay minimal attention to it, with or without a spinal cord injury. What is it, how much do we need and how does our body process it, especially following a spinal cord injury? We’re happy to have Registered Dietitian Nutritionist, Shelley Wood, share her insight, research and recommendations on the “role of fat in a healthy diet following spinal cord injury” on Tues., Jan. 26th at 5 p.m. PST as part of the “NorCal SCI Presents: Virtual is the New Reality Series”. In her presentation, Shelley examines the:
• different types of fat, where they can be found
• current research pertaining to fat and health
• supplements for brain and cardiovascular health
• particulars related to cooking with oils
• where fat falls when looking at caloric density.

She will review weight management recommendations when it comes to incorporating fat into a healthy diet and will summarize all of the nutrients she has discussed in her past several presentations with emphasis on caloric density.

Shelley is a lifelong advocate of nutrition. When she isn’t working with her patients, she can be found in her greenhouse or kitchen. She obtained her B.S. in Nutritional Science from San Jose State University in 2012 and has been working at Santa Clara Valley Medical Center, one of the top spinal cord injury rehabilitation hospitals in the country, since 2013.  She currently works in the outpatient clinic of the hospital seeing primarily those with SCI and also spends time working with complex GI issues in the outpatient gastroenterology clinic.
